Weeknight Dinner: Balsamic Chicken
I make this chicken at least once a week
Balsamic Chicken Marinade Ingredients:
1/4 cup balsamic vinegar
1/3 cup EVOO
1 TBSP Spicy Brown Mustard - I use this one
1 TSP salt
1 TSP ground black pepper
2 TSP onion granules
2 TSP garlic granules
1 pack of organic chicken breasts - I love Bell & Evans
Steps:
Throw all the ingredients into a gallon Ziploc bag and make sure the marinade gets mixed and the chicken gets coated.
Place the chicken in the fridge and let it marinate for at least two hours.
When you are ready to cook the chicken, empty the entirety of the Ziploc into a baking dish and bake for 25 minutes at 400 degrees F. The chicken cooks in the marinade, and it creates the juiciest, most delicious chicken.
Most recently, I have been pairing this chicken with roasted sweet potatoes and sautéed swiss chard for dinner, but it is also perfect on top of salads or a grain bowl for lunch.
