Lately, I’ve been making a lot of chocolate chia seed pudding. I bought these cute Swell containers on Amazon and I fill unsweetened almond milk (Elmhurst or Almond Malk brand) to the 1 cup line, add 3 TBSP of organic chia seeds and 1 TBSP of organic cacao powder. Mix mix mix with a fork or baby whisk and voila.
I let it sit in the fridge for an hour or so (overnight if I’m on top of my shit) and then I top it with homemade raspberry sauce – this consists of pouring a pack of frozen raspberries from Whole Foods into a pan with some real maple syrup and cooking it down to a jam like consistency.
It is super delicious and very nutritious.
